Pancetta Wrapped Fillet with Pâté
A real dinner party treat that cooks to perfection.
Choose your favourite pâté to fill the fillet.
Cooking times:
Medium rare - 25 min.
Medium - 30 min.
Well done - 40 min.
Serves: 4
• 450g (1lb) piece fillet beef
• 100g (4oz) pâté, eg. Brussels
• 100g (4oz) pancetta slices
• freshly ground black pepper
METHOD:
Preheat the oven to 400F/200C/Gas mark 6.
Cut a horizontal slit in the fillet and spread with the pâté.
Use your hands to mould the fillet back to its shape. Wrap the pancetta slices around it, enclosing it totally.
Lift onto your Cookrite plate and cook:
25 minutes for medium rare.
30 minutes for medium.
40 minutes for well done.
Serve cut into slices.
Don’t forget you can cook your roasties around the fillet at the same time.
