Spicy Beef Fajitas
Cooking time: 25 minutes
Serves: 4
• 450g (1lb) sirloin steak cut into strips
• 1 red pepper, deseeded and diced
• 1 green pepper, deseeded and diced
• 1 medium courgette, wiped and cut into chunks
• 1 red onion, peeled and cut into wedges
• finely grated zest and juice of 1 lime
• 2 tbsp fajita seasoning
• 2 tbsp fresh chopped coriander
METHOD:
Preheat the oven to 400F/200C/Gas mark 6.
Toss together the steak, peppers, courgettes, onion, lime zest and juice and fajita seasoning.
Arrange onto your Cookrite plate and cook for 25 minutes, tossing halfway through.
Serve piping hot in warmed flour tortillas. Scatter with chopped fresh coriander.
(Chicken or pork can be used as an alternative to beef.)
