Mediterranean Chicken
Cooking time: 25 minutes
Serves: 2
• 2 skinless chicken breasts
• 1 tbsp pesto sauce
• 4 thin slices Mozzarella cheese
• 2 slices of aubergine (sliced lengthways)
• 1 beef tomato
• freshly ground black pepper
• fresh basil sprigs
METHOD:
Preheat the oven to 400F/200C/Gas mark 6.
Lift the chicken breasts onto your Cookrite plate and spread the top of each one with a little pesto sauce.
Top with a slice of Mozzarella then a slice of aubergine and a slice of beef tomato.
Finally top with the remaining Mozzarella and season with freshly ground black pepper.
Cook for 25 minutes and serve with fresh basil leaves to garnish.
