Crispy Parmesan Fish Goujons
Just like deep fried but not nearly as calorific!
Try them you will be amazed how crunchy the coating gets.
Cooking time: 12 to 14 minutes
Serves: 4
• 450g (1lb) skinless white fish fillet
• 50g (2oz) parmesan cheese, finely grated
• 50g (2oz) fresh white breadcrumbs
• 1/2tsp paprika
• 1 egg, beaten
METHOD:
Preheat oven to 400F/200C/Gas mark 6.
Cut the fish into thin strips about the size of your little finger.
Toss together the parmesan, breadcrumbs and paprika.
Dip the fish into the beaten egg, then in the dry ingredients to coat evenly.
Lift onto your Cookrite plate and bake for 12 to 14 minutes until golden and crisp.
