Pork with Sesame and Shitake
Cooking time: 20 minutes
Serves: 4
• 450g (1lb) pork loin fillet, sliced into medallions
• 2 tbsp hoi sin sauce
• 2 tbsp dark soy sauce
• 2 tbsp sweet sherry
• 1 clove of garlic, peeled and crushed
• 1 teaspoon clear honey
• 225g (8oz) shitake mushrooms
• 1 tbsp sesame seeds
• 4 spring onions, sliced
METHOD:
Preheat the oven to 400F/200C/Gas mark 6.
Place the pork into a non metallic dish and add the hoi sin sauce, soy sauce, sherry, garlic and honey. Toss well to coat each piece of pork then stir in the mushrooms.
Lift out of the marinade and arrange onto your Cookrite plate.
Scatter with sesame seeds and cook for 20 minutes.
