Garlic and Thyme Roasties
Cooking time: 35 minutes
Serves: 4
• 900g (2lb) potatoes - for best results, we recommend Roosters
• fresh thyme sprigs
• 2 garlic cloves peeled and sliced
• salt flakes (optional)
METHOD:
Preheat the oven to 400F/200C/Gas mark 6.
Peel and cut the potatoes into chunks and cook in a saucepan of lightly salted, boiling water for 5 minutes.
Drain well, return to the saucepan with the thyme sprigs and sliced garlic. Place the lid on the saucepan and shake vigorously. (This will scuff the edges of the potatoes)
Arrange onto your Cookrite plate and roast for 15 minutes, turn the potatoes over and continue cooking for a further 20 minutes or until golden and crispy.
Serve hot sprinkled with a little salt flakes if desired.
